Le « brûlé » : a round trace in the earth around the tree where truffles grow, where the grass grows less or not at all, delimiting zones of natural development of the truffle. This is the visual indicator that a colony of truffle mycorrhize is present.
Caver, cavage : harvest of the truffle with the aid of a dog, a fly or a pig
Gléba : interior part of the truffle with alternating sterile (white) and fertile (black) areas.
Péridium : “skin” or “bark” of the la truffle, this is the shallow rough part.
Canifer : cut with the aid of a knife into the Périgord truffle so as to be sure of its quality.
