bread"},"content":{"rendered":"<p class=\"wp-block-paragraph\">Chez nous, le pain fait int\u00e9gralement partie du menu, c'est un \u00e9l\u00e9ment gastronomique essentiel. <br>Comme pour toutes nos fabrications, nous lui apportons beaucoup de temps et d\u2019attention.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><br><\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Apr\u00e8s avoir d\u00e9gust\u00e9 des milliers de pain de toute sorte, nous sommes arriv\u00e9s \u00e0 cette conclusion : <\/h4>\n\n\n\n<p class=\"wp-block-paragraph\"><br>Ce que\u00a0nous aimons\u00a0dans le pain, c\u2019est la mie alv\u00e9ol\u00e9e, la cro\u00fbte croustillante, le go\u00fbt d'un vrai bl\u00e9. <br><br>Et cette alchimie d'une bonne farine, de l\u2019eau de source, du sel non raffin\u00e9 et des levures indig\u00e8nes, donne un pain unique, \u00e9volutif, chaque jour diff\u00e9rent.<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-large\"><img decoding=\"async\" width=\"1024\" height=\"631\" src=\"https:\/\/www.saint-gery.com\/wp-content\/uploads\/2018\/01\/Pain_four1-scaled-1024x631.jpg\" alt=\"\" class=\"wp-image-7594\" style=\"aspect-ratio:3\/2;object-fit:cover\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Le n\u00f4tre est pr\u00e9par\u00e9 avec la farine moulue \u00e0 la meule de pierre de notre bl\u00e9 truffier et confectionn\u00e9 avec un levain indig\u00e8ne, c\u2019est-\u00e0-dire : <br>de la farine de nos bl\u00e9s, de l\u2019eau de source du Domaine, un peu de sel de Noirmoutier et uniquement les levures indig\u00e8nes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><br>Notre levain a plus de 15 ans. <br><\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Chaque jour, nous le \" rafra\u00eechissons\", c\u2019est-\u00e0-dire que nous le nourrissons. <br>Il est vivant et tous les jours diff\u00e9rent.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bien s\u00fbr, on peut faire du levain en ajoutant des \u00ab sucres \u00bb, pommes, raisins secs, \u2026 <br>\u00e7a fait de tr\u00e8s bons levains qui d\u00e9marrent plus vite. <br>On peut aussi utiliser des levains \u00ab starter \u00bb, de la levure de boulanger et plein d\u2019autre artifices.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><br>Mais au domaine, nous avons voulu extraire la quintessence de notre bl\u00e9 truffier, si particulier, sans y apporter aucun ajout externe. <\/p>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images pourquoi ce levain&nbsp;est vraiment indig\u00e8ne.<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Plus pragmatiquement, pour fabriquer un levain, il faut de la farine, de l\u2019eau de source et \u2026 de la patience.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><br>Le premier matin, il faut m\u00e9langer la farine et l\u2019eau de source en quantit\u00e9 \u00e9quivalente (tant pour tant).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le soir, c\u2019est la m\u00eame chose en rajoutant \u00e0 chaque fois un peu de farine et d\u2019eau \u00ab tant pour tant \u00bb et \u00e0 chaque fois m\u00e9langer.<br>Normalement, d\u00e8s le premier jour, quelques bulles se forment sur le levain, ce sont les levures qui viennent manger la farine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><br>En r\u00e9p\u00e9tant cette op\u00e9ration 2 fois par jour pendant 3 semaines, <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">un levain vivant et \u00ab bouillonnant \u00bb se d\u00e9veloppe avec lequel on peut faire un pain original qui aura un go\u00fbt unique au monde.<\/p>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images columns-default is-cropped class=\"wp-block-paragraph\"><\/p>\n\n\n\n<h4 class=\"wp-block-heading\">L\u2019histoire de notre pain <\/h4>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Son histoire est \u00e9troitement li\u00e9e \u00e0 celle de notre farine de bl\u00e9 truffier qui a commenc\u00e9 il y a trente ans, en 1994.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><br>Le premier assemblage a \u00e9t\u00e9 compos\u00e9 \u00e0 parts \u00e9gales de 3 vari\u00e9t\u00e9s de bl\u00e9s \u00ab pr\u00e9-modernes \u00bb : <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Galibier, Soissons, Baroudeur. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ils ont \u00e9t\u00e9 sem\u00e9s une premi\u00e8re fois en 1994, puis cultiv\u00e9s en bio.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><br>Depuis cette date, chaque ann\u00e9e \u00e0 la r\u00e9colte, les plus beaux grains sont s\u00e9lectionn\u00e9s pour \u00eatre ressem\u00e9s l\u2019ann\u00e9e suivante, <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">c\u2019est notre s\u00e9lection \u00ab Saint-G\u00e9ry \u00bb.<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-full\"><img decoding=\"async\" width=\"683\" height=\"558\" src=\"https:\/\/www.saint-gery.com\/wp-content\/uploads\/2013\/09\/Grain-de-bl\u00e9-e1443268579488.jpg\" alt=\"\" class=\"wp-image-2315\" style=\"aspect-ratio:3\/2;object-fit:cover\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\"><br>Depuis 15 ans, nous introduisons \u00e0 cette s\u00e9lection, une partie de bl\u00e9s anciens de population trouv\u00e9s au gr\u00e9 de rencontres <br>(Rouge de Bordeaux, Touzelle, Barbu du Roussillon, \u2026).&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><br>Ces bl\u00e9s d\u2019apport sont cultiv\u00e9s une premi\u00e8re ann\u00e9e en pur sur une petite surface.<br>Puis nous s\u00e9lectionnons les plus beaux grains qui seront m\u00e9lang\u00e9s \u00e0 la s\u00e9lection &nbsp;\u00ab Saint-G\u00e9ry \u00bb (maximum 10%) <br>pour \u00eatre sem\u00e9s en m\u00e9lange l\u2019ann\u00e9e suivante.<br>Ainsi, nous avons un v\u00e9ritable bl\u00e9 de population adapt\u00e9 \u00e0 notre terroir.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ce bl\u00e9 est cultiv\u00e9 <strong>en semis direct<\/strong> et pousse en concurrence-symbiose avec la flore indig\u00e8ne <br>et quelques l\u00e9gumineuses naines fixatrices de l\u2019azote de l\u2019air (tr\u00e8fle nain, lotier cornicul\u00e9, luzerne lupuline) <br>sur des <strong>plateaux calcaires<\/strong> tr\u00e8s superficiels sur lesquels <strong>nous avons plant\u00e9s des truffiers<\/strong> (ch\u00eanes pubescent, ch\u00eanes verts et kerm\u00e8s, noisetiers de Byzance, \u2026) <strong>et de la vigne<\/strong>.<\/p>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images columns-default is-cropped wp-block-gallery-3 is-layout-flex wp-block-gallery-is-layout-flex\">\n<figure class=\"wp-block-paragraph\">Il ne re\u00e7oit aucun apport ext\u00e9rieur, engrais ou autre, les rendements sont de l\u2019ordre de 5 quintaux hectare (dans la Beauce, en conventionnel, ce sont environ 80 quintaux soit 15 fois plus).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Chez nous, le pain a des saveurs de pain d\u2019\u00e9pices et de miel tr\u00e8s prononc\u00e9es.<\/p>\n\n\n\n<p
