Saint-Géry table knives

We chose this winegrower's knife as the table knife for our restaurant. A hand-crafted piece made from fine materials, it features wood from an oak selected on the estate and is engraved with the coat of arms of the Saint-Géry family, lords of the estate since the 9th century. These are "proper knives" that actually cut, as my father used to say.

Saint-Géry table knives

This knife, known as the Liadou—"tool for tying" in Occitan—is the original knife of the winegrowers of Marcillac, near Rodez in Aveyron.
It was used for splitting wicker and tying vines into crowns.
A robust and reliable folding knife, it featured a wide, downward-pointing blade and a firm, responsive flat-spring mechanism.
It disappeared in the mid-20th century with the introduction of wire trellising.

We were drawn to this knife and its history, weaving it with that of the estate by engraving the Saint-Géry family coat of arms. We chose it as the table knife for our restaurant.
Entirely hand-crafted in the Aveyron knife-making heritage, it features a steel blade and finely chased liners.
To ensure the coherence of our approach, we selected an oak from our woods to provide the wood for the handle.
