Truffle Orchard Lamb delivered as a whole carcass
We raise the Castillonnais lamb, a local breed from the Ariège Pyrenees; it is a rare lamb of outstanding quality, with only 1,200 ewes and 40 rams registered in the flock book.
This hardy mountain breed, agile and resilient, is adapted to life outdoors and the specific flora of the estate’s truffle orchards.
On this singular terroir, beneath the oaks and staked vines, this meat breed produces a marbled, juicy meat with a delicate flavor.
Our lambs spend the summer grazing in the truffle orchards.
They roam freely day and night across several hectares, feeding on the leaves of truffle oaks, the grass and flora of the orchards, vine shoots (and grapes too!), along with a few organic grains from the estate, and drinking water from the Source aux Loups. They are never given industrial feed. They are organic, of course.
Every day, our daughter Camille sets up new fencing and moves the lambs to a new paddock so they have fresh grass daily: this is known as Dynamic Rotational Grazing.
This meat of outstanding quality is suitable for freezing.
