Organic Padronade
Our organic permaculture kitchen garden covers 2 hectares. We grow around a hundred varieties of vegetables there, in open fields, without any greenhouses. All these vegetables draw their nutrients directly from a living soil, are ripened naturally by the sunlight, and are watered with rainwater and water from our Source aux Loups.
We discovered padrons a few years ago, when Ricardo, a chef from Galicia, visited us to learn about our cuisine and our methods of production in harmony with nature and our health. In his luggage, Ricardo brought padron seeds. We sowed them in our kitchen garden, alongside aubergines and red onions. Since then, every year from July to late October, we harvest these peppers while they are still small, and we prepare them as fritters or simply fried in lard, and finally as a padronade with tomatoes and onions.
