Octobre Rouge, organic open-field tomato concentrate

Our organic kitchen garden, cultivated using permaculture, spans 2 hectares. We grow around a hundred varieties of vegetables there, in open fields, without any greenhouses. All these vegetables find their nutrients directly in a living soil, ripen naturally under the sun, and are watered with rainwater and water from our Source aux Loups.

We grow a dozen varieties of tomates including Cœur de Bœuf, Rose de Berne, Noire Russe, Green Zebra, Andine Cornue, Yasha Yougoslavian, and Rio Grande..., all selected for their depth of flavor. Ripened in the sun, never treated or forced, their taste is remarkable.

Perfectly juicy, they are hand-picked at full maturity and carefully arranged in crates, rather than being machine-harvested and piled up.

Harvested and prepared immediately, they never enter cold storage. We offer a highly concentrated tomato coulis for use in various preparations: seasoning for pasta, an accompaniment for meat or fish, tomato sorbet, a velouté, or a tomato-based lamb jus...
