Truffle Orchard Honey

We have 4 active hives in the middle of the estate's 70 hectares, just above the Source aux Loups at the edge of the woods.
The bees forage mainly in the estate's truffle orchards in an environment free from pollution and pesticides.
A few years ago, we planted several hundred lavender plants, as my wife Pascale loves lavender honey.
Since then, our bees have been joyfully visiting our lavender in the truffle orchards.

Bees make honey primarily for themselves, not for us, as it serves as their stores to feed on during the winter.

Yet most beekeepers harvest all the honey and feed the bees refined cane sugar.
But the impact of sugar on bees compared to honey is entirely different.
While honey gives them strength and builds immunity, sugar feeds them but does not fortify them.
On the contrary: they are weakened, less resilient, and unable to resist diseases and predators.

This is why we have chosen to feed our bees with their own honey, thereby 'relinquishing' a portion of our harvest for the well-being of our pollinators.

This honey therefore does not taste of processed sugar, but has the fine taste of wildflower honey, with a hint of lavender.

And it is even better enjoyed with the truffle wheat bread with its notes of gingerbread.
