Organic Poivronade
Because peppers are low in calories and excellent for health, we grow many varieties in our kitchen garden. Rich in vitamins A, C and K, they are a true source of antioxidants.
Gently cooked down with tomatoes and onions, this pepper compote is the ideal accompaniment for meat, eggs, fish and, of course, Gascon pork figatelle.

Open-field peppers, full of flavour, harvested when perfectly ripe—just before the roe deer, great lovers of crisp and juicy vegetables, come to devour them!
Our organic permaculture kitchen garden covers 2 hectares. We grow around a hundred varieties of vegetables there, in open fields, without any greenhouses. All these vegetables draw their nutrients directly from a living soil, are ripened naturally by the sunlight, and are watered with rainwater and water from our Source aux Loups.
