In the kitchen, hydrosols add fragrance while providing the plant's benefits. They are particularly used in pastries (biscuits, creams, ice creams), sauces and drinks (non-alcoholic cocktails), to flavour meat and fish. Floral waters lose their aromatic and flavour properties during cooking, so they are only used cold or at the end of the process, diluted in a juice or sauce, or sprayed over a dish (roast pork and sage floral water, peas with winter savory, apricot and rosemary tart, lavender ice cream...)
