Aged vinegar syrup
Crafted on the estate from a solera of vinegar aged for over 30 years, it is matured in oak barrels. Its natural acetic ferments are highly beneficial.
Ideal for dressing salads and foie gras, flavoring spelt or rye risottos, or enhancing fish or lobster... It can also be used on fruit salads or ice cream.
An easy recipe to prepare: carpaccio of Rouge d'Etampes pumpkin, baby leeks and aged vinegar syrup
