Extra brushed truffles, first cooking
“First cooking” is a mark of quality for bottled truffles. It ensures a fragrance and texture comparable to fresh truffles.
Since 1989, we have planted various species every year on our Quercy Blanc limestone plateau. Oaks, of course—holm oaks, downy oaks, kermes oaks, Turkey oaks—along with common and Turkish hazels. All these saplings are mycorrhized with the Melanosporum truffle.
Here are some of the recipes served at our restaurant table:
- Braised leeks, truffles and ventrèche
- Bone and rind broth, ham and truffles
- Lard and truffle brioche
- Potted foie gras with 14% truffle
- Cabécou with truffle, homemade crispbread
- "Curé" velouté, pumpkin, foie gras, and truffle
- Potatoes en demi-deuil
- Salt-matured foie gras with truffle
- Kiwi sabayon with truffle
