Mountain Bull Pâté

Since even "artisanal" pâtés can be disappointing, we have created a savory terrine using bull raised in the mountains, on the Pyrenean foothills.

For a perfect pairing, try our organic truffle-wheat bread made with wild sourdough, crafted here at the Domaine.

Mountain Bull Pâté

You are often disappointed by tasteless pâtés with a minced texture and flavors boosted by chemical enhancers.
I understand.
At Maison Duler, a pâté should never be a byproduct. It must be made with the highest quality, freshest ingredients—from the meat and fat to the salt and spices.

We waited a long time for "our" bull to reach the age where its meat would be of exceptional quality.
Raised alongside a herd of Gascon pigs in the mountains, it never experienced the stress of intensive farming or the bullring. Nourished by lush, rich grass and drinking from mountain streams, its 700 kg of muscle and meat allowed us to craft saucissons and a pâté according to time-honored methods.
We used the lean bull meat and the fat from our Gascon pigs to create this flavorful terrine, without any chemical additives.
