Un foie gras mi cuit est donc moins cuit que 104 °.
Dans la pratique, il y a deux sortes de foie gras mi-cuit, ceux qui sont cuits autour de 70 80 °et qui se conservent 6 à 12 mois au frais et ceux cuits autour de 55° qui sont beaucouip plus moelleux eet qui se conservent quelques semaines maximum.
