Marbled foie gras Bacchus
This marbled foie gras was born from a refusal: to serve a uniform foie gras.
Prepared from Extra 1 foie gras, poached in an organic red wine jelly with mild 'Roman-style' spices.
Flavorful, long on the palate, and easy to digest. And remarkably simple to serve: a spoon and nothing more.
Found nowhere else. Prepared on the day of slaughter. Can be kept for 3 months in the refrigerator.
For those who are tired of the fear of disappointing their guests.

Marbled foie gras Bacchus
Have you ever brought out a 'festive' foie gras... with that slight fear of being disappointed (and looking foolish in front of others)?
You know it as well as I do: foie gras is everywhere, but rarely does it deliver on its promise of taste.
We overlook the heart of the matter: the pleasure of serving something that stands on its own.
No additives. No preservatives. No artificial flavors.
Bacchus: a marbled foie gras, not a classic one
Imagine a jambon persillé, but without the parsley and made with foie gras.
Cubes of Extra 1 quality (the finest), poached in a jelly made from the estate's organic red wine with mild 'Roman-style' spices: cinnamon, grains of paradise, cardamom… and a touch of Espelette pepper.
Let's be clear from the start: this marbled foie gras is found nowhere else.
And here is what awaits you:
- A flavorful taste, long on the palate
- Disconcertingly easy to serve
- Guests who help themselves to more (without even asking permission)
But not only.
This marbled foie gras is easy to digest, thanks to the properties of the organic red wine and aromatics from the estate.
You will feel the difference the morning after.
How to serve it?
Nothing could be simpler.
- Take the jar out 15 minutes in advance
- Place it on the table
- Serve directly with a spoon
Yes, that is all. No precarious slicing, no stress.
And you can keep it for 3 months in the refrigerator.
Convenient for the unexpected, or for hiding the jar at the back of the refrigerator until the in-laws have left.
A rigorous selection of ducks
Selected ducks, raised and fattened on maize in the South-West of France.
We receive them four hours after slaughter. My wife and daughter devein them meticulously, and I prepare them the same day.
It is a concrete example of what 'fresh' means here.
Frequently asked questions
Is this a foie gras like any other?
No. Meticulously deveined, cut into cubes, and poached in an organic red wine. Its fine spiced jelly makes it impossible to mistake for a classic one.
Is the wine flavor pronounced?
No. The wine provides a subtle aromatic structure, not a sensation of alcohol.
